Maple Syrup is made each spring as the days lengthen and the temperature warms. We taste each batch as it comes off the evaporator. Our Sugarhouse Reserve Maple Syrup is picked from the very peak of our season. This year that occurred on March 23-25th, 2023 and was a little unusual. Unlike previous years where we get a big warm-up for several days and nights straight and produce a large amount of syrup, this year was characterized by short sap runs of a few hours on successive days. Temperatures were fairly cold in Northern Vermont through March 22nd, and also cloudy. We finally got a series of three days where the sun came out and warmed the temperatures just above freezing by early afternoon. The sap came gushing out of our trees for a few hours before nightfall when the temperatures dropped back below freezing. The colder than normal temperatures during this time resulted in a syrup that tastes buttery and richer than normal. Try some yourself, we're sure you will enjoy.
